2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/4 cup granulated sugar

1/2 cup unsalted butter, cold and cubed

3/4 cup whole milk

1 teaspoon vanilla extract

1/2 cup shredded sharp cheddar cheese (optional)

2 tablespoons fresh chives, chopped (optional)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the flour, baking powder, salt, and sugar. Whisk them together until well blended.

      Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs.

        In a small bowl, mix together the milk and vanilla extract. Pour the milk mixture into the dry ingredients and stir just until combined. If using, fold in the cheddar cheese and chives at this point. Do not overmix; the dough should still be slightly shaggy.

          Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a rectangle about 1-inch thick.

            Use a sharp knife or a pizza cutter to cut the dough into squares or use a round biscuit cutter to cut out circular biscuits. Place them on the prepared baking sheet, making sure they are touching slightly for a soft edge.

              Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.

                Once out of the oven, allow them to cool for a few minutes and then serve warm with butter or jam.
