1 pound fresh mushrooms (cremini or button), sliced

1 medium onion, finely chopped

3 cloves garlic, minced

4 tablespoons unsalted butter

1 tablespoon olive oil

1/4 cup all-purpose flour

4 cups low-sodium vegetable broth

1 cup heavy cream

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil and 2 tablespoons of the butter over medium heat.

    Add the chopped onions and sauté until they become translucent, about 4-5 minutes.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the sliced mushrooms to the pot and cook, stirring occasionally, until they soften and release their moisture, approximately 8-10 minutes.

          Sprinkle the flour over the mushroom mixture, stirring well to coat everything evenly. Cook for another 2 minutes to eliminate the raw flour taste.

            Gradually pour in the vegetable broth while continuously stirring to avoid lumps. Bring the mixture to a gentle boil, then reduce the heat to a simmer.

              Add the dried thyme and season with salt and pepper to taste. Let the soup simmer for about 15 minutes to allow the flavors to meld together.

                Stir in the heavy cream and remaining 2 tablespoons of butter. Heat through but do not bring to a boil.

                  For a creamier texture, use an immersion blender to purée the soup to your desired consistency, or blend in batches in a regular blender (being cautious with the hot liquid).

                    Taste and adjust the seasoning as necessary.
