2 cups all-purpose flour

3 large eggs

1/2 teaspoon salt

1 tablespoon olive oil (or melted butter)

Water (as needed)

Instructions
 

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center of the flour mound.

    Crack the eggs into the well. Add the olive oil to the eggs.

      Using a fork, gently whisk the eggs and olive oil together, gradually incorporating the flour from the edges of the well.

        Continue mixing until a shaggy dough forms, then use your hands to knead the dough in the bowl until it comes together.

          Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes until it’s smooth and elastic.

            Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

              After resting, divide the dough into quarters for easier handling. Keep the pieces you aren’t using covered to prevent drying out.

                Roll out one piece of dough to your desired thickness using a rolling pin or pasta machine. Aim for about 1/16 to 1/8 of an inch thick.

                  Once rolled out, dust the sheet with flour, then fold it loosely several times, and slice into your preferred noodle width (about 1/4 inch for fettuccine).

                    Unfold the noodles and lay them flat on a floured surface or hang them to dry slightly for about 10-15 minutes.

                      Repeat the rolling and cutting process with the remaining dough.

                        To cook, bring a large pot of salted water to a boil. Add the noodles and cook for about 3-5 minutes until they float to the surface and are tender but still slightly chewy.

                          Drain the noodles and toss them with your desired sauce, or use them in your favorite recipe.
