1 large egg (room temperature)

1 tablespoon Dijon mustard

1 tablespoon white vinegar or lemon juice

1 cup neutral oil (like canola or grapeseed)

Salt to taste

A pinch of pepper (optional)

1 teaspoon garlic powder (for a twist)

Instructions
 

In a tall mixing container or a blender, combine the egg, Dijon mustard, and vinegar (or lemon juice). Make sure your egg is at room temperature to ensure proper emulsification.

    Using an immersion blender (or regular blender), blend the mixture on high for about 10 seconds until it’s well combined and slightly frothy.

      With the blender running, slowly drizzle in the oil (very slowly at first). This is crucial — adding it too quickly will break the emulsion. Continue blending while adding the oil until the mayonnaise thickens and doubles in volume.

        Once the mayonnaise has reached your desired consistency, taste it and add salt, pepper, and garlic powder if desired. Blend briefly to combine.

          Transfer the homemade mayonnaise to a clean jar or container with a lid. Store it in the refrigerator for up to 1 week.
