1 lb ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 large egg

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 cup marinara sauce (homemade or store-bought)

4 sub rolls

1 cup shredded mozzarella cheese

Olive oil for frying

Instructions
 

In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, oregano, salt, and black pepper. Mix until just combined; be careful not to overwork the meat.

    Shape the mixture into 12-15 evenly sized meatballs, about 1-1.5 inches in diameter.

      Heat a splash of olive oil in a large skillet over medium heat. Add the meatballs to the skillet and cook until browned on all sides, about 7-10 minutes. They do not need to be cooked through at this point.

        Pour the marinara sauce over the meatballs, cover, and simmer on low heat for an additional 10 minutes, or until the meatballs are cooked through and heated thoroughly.

          While the meatballs are simmering, preheat your oven to 350°F (175°C).

            Slice the sub rolls in half lengthwise, leaving one side attached. Place them on a baking sheet.

              Once the meatballs are ready, place 3-4 meatballs into each sub roll, then spoon some marinara sauce over the top.

                Generously sprinkle shredded mozzarella cheese on top of each sub.

                  Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.

                    Remove from the oven and let cool for a few minutes before serving. Enjoy!
