1 lb (450g) smoked sausage, sliced

4 medium potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

3 cups chicken broth

1 cup heavy cream

1 cup corn kernels (fresh or frozen)

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the smoked sausage slices and sauté for about 5-7 minutes until they are browned and slightly crispy. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the pot.

    In the same pot, add the chopped onion and cook for 3-4 minutes until it has softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Stir in the diced potatoes, chicken broth, dried thyme, and smoked paprika. Bring to a boil, then reduce the heat to a simmer. Cover and cook for about 15-20 minutes or until the potatoes are tender.

        Once the potatoes are tender, stir in the corn and return the sautéed sausage to the pot. Let everything simmer for another 5-10 minutes, allowing the flavors to meld.

          Reduce the heat to low and stir in the heavy cream. Season the chowder with salt and pepper to taste. Stir gently until the chowder is heated through (do not bring to a boil after adding the cream).

            Remove from heat and let it rest for a few minutes. Then, garnish with chopped fresh parsley before serving.
