Ingredients

4 medium-sized russet potatoes

2 teaspoons sea salt

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon freshly ground black pepper

3 tablespoons olive oil (or vegetable oil)

Optional: Fresh herbs (like rosemary or thyme) for garnish

Instructions

Prepare the Potatoes: Thoroughly wash the russet potatoes to remove dirt. Utilizing a mandoline slicer or a sharp knife, slice the potatoes into thin rounds (about 1/8 inch thick). Aim for even thickness to ensure uniform cooking.

Soak the Potato Slices: Place the sliced potatoes in a large bowl of cold water. Soak them for at least 30 minutes (up to 1 hour) to remove excess starch, which helps achieve crispiness.

Dry the Potatoes: After soaking, drain the water and pat the potato slices dry with a clean kitchen towel or paper towels. Removing moisture is crucial for crispiness.

Season and Oil: In a separate bowl, combine the sea salt, smoked paprika, garlic powder, onion powder, and black pepper. Drizzle the olive oil over the dried potato slices and toss to coat evenly. Then sprinkle the seasoning mixture over the potatoes, ensuring all slices are well seasoned.

Preheat the Oven: Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper or silicone baking mats for easy cleanup.

Arrange on Baking Sheets: Spread the seasoned potato slices on the prepared baking sheets in a single layer, ensuring they do not overlap. This allows for even baking.

Bake: Bake in the preheated oven for about 20-25 minutes, flipping halfway through. Keep a close watch toward the end as baking times may vary based on the thickness of the slices and your oven. They should be golden brown and crisp.

Cool and Serve: Remove the chips from the oven and let them cool for a few minutes on the baking sheets, allowing them to crisp up further. Optional: garnish with freshly chopped herbs for added flavor and aroma.

Enjoy: Serve the homemade potato chips warm as a snack or appetizer, with dips like guacamole, salsa, or your favorite hummus.
