Homemade Shrimp Fried Rice

1 cup uncooked jasmine rice

2 cups water

1 pound shrimp, peeled and deveined

2 tablespoons vegetable oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup mixed vegetables (peas, carrots, and corn)

3 green onions, chopped

2 large eggs, lightly beaten

3 tablespoons soy sauce

1 tablespoon sesame oil

Salt and pepper to taste

Optional: cilantro for garnish

Begin by cooking the jasmine rice. In a medium saucepan, combine the rice and water, bringing it to a boil. Once boiling, reduce to low heat, cover, and simmer for 15 minutes or until the rice is tender. Remove from heat and let it sit covered for an additional 10 minutes, then fluff with a fork.

    While the rice cooks, prepare the shrimp. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside.

      In the same wok, add another tablespoon of oil. Sauté the chopped onion and minced garlic for about 1-2 minutes until the onion becomes translucent and fragrant.

        Add the mixed vegetables to the pan and stir-fry for another 3-4 minutes until they're tender.

          Push the vegetables to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix everything together.

            Add the cooked rice to the wok, followed by the shrimp, chopped green onions, soy sauce, and sesame oil. Stir well to incorporate all the ingredients and cook for another 3-4 minutes until heated through. Season with salt and pepper to taste.

              Once well combined and heated, remove from heat and garnish with fresh cilantro if desired before serving.
