Ingredients

1 ½ cups all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

¾ cup honey

½ cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

2 medium apples, peeled, cored, and diced

½ cup sliced almonds

¼ cup chopped walnuts (optional)

1 tablespoon lemon juice

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.

In a large mixing bowl, combine the honey, vegetable oil, and vanilla extract. Mix well.

Add the eggs one at a time, beating well after each addition until the mixture is light and frothy.

Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined.

Fold in the diced apples and lemon juice, ensuring they are evenly distributed throughout the batter.

Gently fold in the sliced almonds and walnuts, if using, until incorporated.

Pour the batter into the prepared cake pan and spread it evenly.

Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, remove from the oven and cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
