When I think about the ingredients for honey pineapple salmon, a few key items come to mind. First, you need fresh salmon fillets. I like to use four fillets, each about six ounces. The salmon is the star of this dish.

Ingredients

4 salmon fillets (6 oz each)

1 cup fresh pineapple, diced

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon lime juice

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

Salt and pepper to taste

2 tablespoons olive oil

Sliced green onions for garnish (optional)

Instructions

In a mixing bowl, combine the diced pineapple, honey, soy sauce, lime juice, minced garlic, and grated ginger. Mix well to create a marinade.

Place the salmon fillets in a shallow dish and pour half of the marinade over the salmon. Allow it to marinate for at least 20 minutes, turning occasionally.

Preheat your grill or oven to medium-high heat (around 400°F / 200°C). If using a grill, oil the grates to prevent sticking.

Remove the salmon from the marinade and season with salt and pepper. Set aside the remaining marinade for basting.

Lightly brush the salmon fillets with olive oil and place them skin-side down on the grill or on a lined baking sheet if baking.

Grill the salmon for about 4-6 minutes on each side, basting with the reserved marinade periodically, until the salmon is cooked through and flakes easily with a fork. If baking, cook for 12-15 minutes until done.

Once the salmon is cooked, remove it from the heat and let it rest for 3 minutes.

Serve the salmon topped with additional pineapple pieces and drizzled with extra marinade, if desired.

Garnish with sliced green onions for an added touch of flavor and color.
