3 medium red bell peppers

1 cup walnuts, toasted

2 cloves garlic, minced

2 tablespoons pomegranate molasses

1 tablespoon tahini

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust to taste)

Salt, to taste

2 tablespoons olive oil

Roast the Peppers: Preheat your oven to 425°F (220°C). Place the red bell peppers on a baking sheet and roast for about 25-30 minutes, turning occasionally, until the skins are charred and blistered. Remove from the oven and cover them with a kitchen towel to steam for about 10 minutes.

    Prepare the Peppers: Once the peppers are cool enough to handle, peel off the charred skin, remove the stems and seeds. Chop the roasted peppers into smaller pieces.

      Blend the Dip: In a food processor, combine the roasted bell peppers, toasted walnuts, minced garlic, pomegranate molasses, tahini, ground cumin, smoked paprika, cayenne pepper, and salt. Pulse until you achieve a smooth and creamy consistency.

        Incorporate Olive Oil: While blending, gradually drizzle in the olive oil until well combined and creamy. Taste and adjust seasoning if necessary, adding more salt or cayenne as desired.
