Instant Pot Tuscan Chicken Pasta

1 lb (450g) boneless, skinless chicken thighs, diced

12 oz (340g) penne pasta

1 cup sun-dried tomatoes, chopped (oil-packed for extra flavor)

1 cup baby spinach

1/2 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Set the Instant Pot to ‘Sauté’ mode. Add olive oil and let it heat up for about 1 minute.

    Once hot, add the diced chicken thighs to the pot. Season with salt, pepper, and Italian seasoning. Sauté the chicken until browned on all sides (about 5-7 minutes).

      Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Add the chopped sun-dried tomatoes and chicken broth to the pot. Stir well to combine.

          Pour the uncooked penne pasta over the mixture. Do not stir but gently press the pasta down into the liquid to ensure it's submerged.

            Close the lid of the Instant Pot and ensure the valve is set to ‘Sealing’. Set the cooking time to 5 minutes on high pressure.

              Once the cooking time is up, carefully perform a quick release by turning the valve to ‘Venting’.

                After the pressure is released, carefully remove the lid and add the baby spinach and heavy cream. Stir until the spinach wilts and the cream is fully mixed.

                  Finally, mix in the grated Parmesan cheese until melted and creamy. Adjust salt and pepper as needed.

                    Serve the pasta hot, garnished with fresh basil leaves if desired.
