1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup diced jalapeños (fresh or pickled)

1/4 cup green onions, chopped

1 teaspoon garlic powder

1/2 teaspoon paprika

10 small flour tortillas

1/2 cup diced red bell pepper (for garnish)

Instructions
 

In a mixing bowl, combine the sweet corn, cream cheese, shredded cheddar cheese, diced jalapeños, green onions, garlic powder, and paprika. Mix until the ingredients are well blended and creamy.

    Lay one tortilla flat on a clean surface. Spoon about 2-3 tablespoons of the corn mixture onto the center of the tortilla.

      Carefully roll the tortilla tightly around the filling. Repeat this process with the remaining tortillas and filling.

        Once all tortillas are filled and rolled, slice each roll into bite-sized pieces (about 1-inch thick).
