Irish Bacon, Cabbage, and Potato Soup

4 slices of Irish back bacon, chopped

1 medium onion, diced

2 cloves garlic, minced

4 medium potatoes, peeled and diced

1 small head of green cabbage, chopped (about 4 cups)

6 cups chicken or vegetable broth

1 teaspoon thyme leaves

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped Irish bacon and cook until it's crispy and golden, about 5-7 minutes. Remove it from the pot and set aside, leaving the fat in the pot.

    In the same pot, add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic, cooking for another minute until fragrant.

      Add the diced potatoes, chopped cabbage, chicken or vegetable broth, thyme leaves, and bay leaf to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for around 20-25 minutes, or until the potatoes and cabbage are tender.

        Remove the bay leaf from the soup. Using a potato masher, gently mash some of the potatoes in the pot for a thicker texture, but leave some chunks for heartiness.

          Return the crispy bacon to the pot, stir well, and season with salt and pepper to taste. Allow the soup to simmer for an additional 5 minutes for the flavors to meld.

            Serve hot, garnished with chopped fresh parsley on top.
