6 slices of Irish bacon (or pancetta), chopped

1 medium onion, diced

3 cloves garlic, minced

4 cups vegetable or chicken broth

2 medium potatoes, peeled and diced

1 small head of green cabbage, chopped

2 carrots, diced

1 teaspoon dried thyme

1 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1 tablespoon olive oil

2 tablespoons fresh parsley, chopped (for garnish)

Optional: 1/4 cup heavy cream (for a creamy variation)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes.

    Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

      In the same pot, add the diced onion and garlic, and sauté until the onion turns translucent, about 3-4 minutes.

        Add the diced potatoes, carrots, and chopped cabbage to the pot, stirring to combine. Cook for 5 minutes to let the vegetables soften a bit.

          Pour in the broth, and add the thyme, black pepper, and salt. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are fork-tender.

            If you prefer creamy soup, stir in the heavy cream at this stage and heat through for an additional 2-3 minutes.

              Return the crispy bacon to the pot and give everything a good stir to combine.

                Taste and adjust seasoning if necessary.

                  Serve hot, garnished with fresh parsley on top.
