Ingredients
  

2 pounds of Yukon Gold potatoes, peeled and diced

1 cup of green cabbage, finely shredded

1 cup of kale, finely chopped

4 green onions, sliced (white and green parts separated)

1 cup of whole milk

4 tablespoons of unsalted butter

Salt and pepper to taste

½ teaspoon of freshly grated nutmeg

1 cup of shredded sharp cheddar cheese

½ cup of cooked bacon, chopped (optional for a non-vegetarian twist)

Instructions
 

Cook the Potatoes: Place the diced potatoes in a large pot, cover them with cold water, add a pinch of salt, and bring to a boil over medium-high heat. Cook until tender, about 15-20 minutes.

    Sauté the Greens: While the potatoes are cooking, in a large skillet, melt 2 tablespoons of butter over medium heat. Add the white parts of the green onions, cabbage, and kale. Sauté for about 5-7 minutes until softened.

      Drain the Potatoes: Once the potatoes are tender, drain them well and return them to the pot.

        Mash the Potatoes: Add the whole milk, remaining butter, salt, pepper, and grated nutmeg to the potatoes. Mash until smooth and creamy.

          Combine Ingredients: Fold the sautéed cabbage and kale mixture into the mashed potatoes. Stir in the green parts of the onions, cheddar cheese, and bacon (if using).

            Final Touch: Taste and adjust the seasoning if necessary. If you prefer a creamier texture, add a little more milk.

              Serve: Transfer the colcannon to a serving bowl and create a well in the center. Place a pat of butter on top to melt before serving.
