4 large potatoes (like Russets), peeled and cubed

1 cup heavy cream

4 tablespoons unsalted butter

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon nutmeg

1 cup shredded sharp cheddar cheese

1 onion, finely chopped

2 cloves garlic, minced

2 tablespoons fresh chives, chopped

1 pre-made pie crust (store-bought or homemade)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large pot of salted water, boil the cubed potatoes for about 15-20 minutes, or until fork-tender. Drain and set aside.

      In the same pot, return the drained potatoes and add the heavy cream, butter, salt, black pepper, and nutmeg. Mash until smooth and creamy. Set aside to cool slightly.

        In a skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Add the minced garlic and cook for another minute until fragrant.

          Stir the sautéed onions and garlic into the mashed potato mixture. Add half of the shredded cheddar cheese and the chopped chives, mixing until everything is well combined.

            Pour the potato mixture into the pie crust, spreading it evenly. Top with the remaining cheddar cheese.

              Bake in the preheated oven for 25-30 minutes, or until the top is golden and the cheese is bubbly.

                Remove from the oven and let it cool for about 10 minutes before slicing.
