4 slices of ciabatta bread

2 tablespoons pesto

4 slices fresh mozzarella cheese

4 slices aged provolone cheese

1 medium tomato, sliced

1/4 cup fresh basil leaves

2 tablespoons olive oil

Salt and pepper to taste

Instructions
 

Begin by drizzling one side of each slice of ciabatta bread with olive oil. This will be the outer side that gets grilled.

    On the un-oiled side of two slices, spread a tablespoon of pesto evenly.

      Layer two slices of fresh mozzarella cheese on top of the pesto, followed by two slices of aged provolone cheese.

        Add a few tomato slices, season with salt and pepper, and top with fresh basil leaves.

          Cover with the remaining two ciabatta slices, oiled side facing out.

            Preheat a non-stick skillet over medium heat. Once hot, place the first sandwich in the skillet.

              Cook for about 3-4 minutes on one side, until golden brown and the cheese begins to melt. Carefully flip the sandwich and grill the other side, ensuring it turns golden brown as well.

                Repeat the process for the second sandwich.

                  Once both sandwiches are done, remove from the skillet and let them cool for a minute before cutting in half to serve.
