3 to 4 pounds boneless beef chuck roast

2 tablespoons olive oil

1 large onion, chopped

4 cloves garlic, minced

2 carrots, sliced

2 celery stalks, sliced

1 can (14 oz) diced tomatoes (with juices)

2 cups beef broth

1 cup orange juice

2 teaspoons dried oregano

1 teaspoon dried basil

1 teaspoon dried thyme

Zest of 1 lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 325°F (160°C).

    In a large Dutch oven, heat olive oil over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it in the hot oil on all sides until browned, about 3-4 minutes per side. Remove the roast and set aside.

      In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.

        Add the can of diced tomatoes (including juices) to the pot and stir, scraping any browned bits from the bottom for additional flavor.

          Pour in the beef broth and orange juice, then stir in the dried oregano, basil, thyme, and lemon zest. Return the seared roast to the pot, making sure it’s submerged in the liquid.

            Cover with a lid and transfer to the preheated oven. Cook for approximately 3-4 hours, or until the meat is fork-tender.

              Once done, remove the pot from the oven. Take the roast out and let it rest for about 10 minutes before slicing.

                Serve the slices of pot roast on a platter, with the delicious vegetable and sauce mixture spooned over the top.

                  Garnish with freshly chopped parsley for an added burst of color and flavor.
