Ingredients

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (or buttermilk for a richer flavor)

1/4 cup vegetable oil

1 large egg

1 cup shredded sharp cheddar cheese

2-3 jalapenos, finely chopped (seeds removed for less heat)

1 tablespoon honey (optional for a hint of sweetness)

Instructions

Preheat your oven to 400°F (200°C). Grease a 9-inch square baking pan or cast-iron skillet.

In a large mixing bowl, whisk together the cornmeal, flour, baking powder, and salt until well combined.

In another bowl, mix the milk, vegetable oil, and egg together, then add honey if using. Stir until fully combined.

Pour the wet ingredients into the dry ingredients, mixing until just combined. Do not overmix; a few lumps are okay.

Gently fold in the shredded cheddar cheese and chopped jalapenos, ensuring even distribution.

Pour the batter into the prepared pan or skillet, smoothing the top with a spatula.

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Once baked, let it cool in the pan for 10 minutes before slicing into squares or wedges for serving.

Prep Time: 10 minutes | Total Time: 35 minutes | Servings: 8-10 pieces

                    - Presentation Tips: Serve warm with a pat of butter on top or drizzle with honey for added sweetness. Garnish with a sprig of parsley or a few slices of fresh jalapeno for a pop of color!
