8 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

4 jalapeños, finely chopped (seeds removed for less heat)

1/2 cup cooked bacon, crumbled (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

Olive oil for cooking

In a large mixing bowl, combine the softened cream cheese, cheddar cheese, pepper jack cheese, chopped jalapeños, crumbled bacon (if using), garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined and creamy.

    Heat a large skillet over medium heat and drizzle a little olive oil to coat the pan.

      Place one tortilla in the skillet and spread half of the cheese and jalapeño mixture evenly over the surface. Top with a second tortilla.

        Cook for about 3-4 minutes on one side or until the bottom tortilla is golden brown and crispy.
