Ingredients

1 lb ground chicken

1/2 cup breadcrumbs (preferably Italian seasoned)

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 tablespoons olive oil (for frying)

For the Creamy Herbed Ricotta:

1 cup ricotta cheese

2 tablespoons fresh chives, chopped

1 tablespoon fresh basil, chopped

1 tablespoon lemon juice

Salt and pepper to taste

Instructions

Prepare the Meatball Mixture: In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan, egg, minced garlic, parsley, oregano, basil, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Form the Meatballs: Using your hands, shape the mixture into meatballs, roughly 1.5 inches in diameter, placing them on a lined baking sheet.

Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the meatballs in batches, cooking until they are browned on all sides and cooked through (about 8-10 minutes total). Remove them and set aside on a paper towel to drain excess oil.

Prepare the Herbed Ricotta: In a medium bowl, mix the ricotta cheese, chopped chives, basil, lemon juice, salt, and pepper until creamy and well combined. Adjust seasoning to taste.

Serve: Plate the meatballs and generously spoon the creamy herbed ricotta over the top.

Garnish and Enjoy! Optionally, garnish with a sprinkle of extra parsley or a few fresh basil leaves for a pop of color and freshness.

              Prep Time: 20 minutes | Total Time: 40 minutes | Servings: 4

                - Presentation Tips: Serve the meatballs on a bed of arugula or alongside roasted vegetables for a colorful dish. Use a shallow bowl to present the dish, and place a dollop of herbed ricotta on top of the meatballs, drizzling a bit of olive oil around the plate for an elegant finish.
