1 lb sirloin steak, cut into bite-sized cubes

Salt and pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh thyme, chopped

1 lb russet potatoes, peeled and diced

½ cup heavy cream

1 cup shredded sharp cheddar cheese

2 tablespoons green onions, chopped (for garnish)

Prep the Steak: Season the steak cubes generously with salt and pepper. Set aside to marinate while you prepare the mashed potatoes.
