4 cups water

4 tablespoons green tea leaves (Kashmiri green tea preferred)

1/4 teaspoon baking soda

2 cups milk (full-fat for creaminess)

1/4 cup sugar (adjust to taste)

1/2 teaspoon cardamom powder

A pinch of salt

Chopped pistachios and almonds for garnish

A few strands of saffron (optional, for aroma and color)

In a large saucepan, bring 4 cups of water to a gentle boil. Add the green tea leaves and baking soda. The baking soda helps to enhance the color and richness of the tea.

    Lower the heat and let the tea simmer for about 10-15 minutes. You’ll notice the water changing to a deep reddish-brown hue.

      Remove the saucepan from heat and use a whisk or a ladle to vigorously beat the tea mixture for about 5 minutes. This helps aerate the tea and develops its creamy texture.

        Strain the tea into another pot or large bowl, discarding the tea leaves, and return it to the stove over low heat.

          Gradually add the milk, continuing to whisk the tea to froth it up. The mixture should start turning a beautiful pink hue. Adjust the amount of milk based on your preference.

            Stir in the sugar, cardamom powder, and a pinch of salt. Allow the chai to gently simmer for an additional 5-10 minutes to blend the flavors.

              Once ready, remove from heat and let it steep for a couple of minutes.

                Pour the Kashmiri pink chai into cups and garnish with chopped pistachios, almonds, and saffron if using.
