Ingredients
  

4 large eggs

4 strips of bacon, chopped

1 cup mushrooms, sliced

1/4 cup bell pepper, diced (red or green)

1/4 cup cheddar cheese, shredded

2 tablespoons heavy cream

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

In a large non-stick skillet, cook the chopped bacon over medium heat until it starts to crisp, about 5-7 minutes. Once cooked, remove the bacon and set it aside, leaving the rendered fat in the pan.

    In the same skillet, add the sliced mushrooms and diced bell pepper to the bacon fat. Sauté until the mushrooms are tender and the peppers are slightly softened, about 4-5 minutes.

      While the vegetables are cooking, crack the eggs into a mixing bowl and whisk in the heavy cream, salt, and pepper until well combined.

        Push the cooked mushrooms and peppers to the side of the skillet, creating space in the center. Pour the egg mixture into the empty space in the skillet.

          Cook the eggs without stirring for about 2-3 minutes until the edges begin to set.

            Sprinkle the cooked bacon and shredded cheddar cheese evenly over the eggs.

              Carefully fold the omelette in half using a spatula and allow it to cook for another 1-2 minutes until the cheese melts and the eggs are fully cooked through.

                Slide the omelette onto a plate and garnish with fresh chives or parsley if desired.
