4 boneless pork chops (about 1 inch thick)

1 cup almond flour

1/2 cup grated Parmesan cheese

2 large eggs

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1/4 cup coconut oil (or olive oil) for frying

1/2 cup unsalted butter

2 tablespoons fresh lemon juice

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Begin by preparing the pork chops. Place them between two sheets of parchment paper and pound them to about 1/4 inch thick using a meat mallet or rolling pin. This helps them cook evenly.

    In a shallow dish, combine the almond flour, grated Parmesan cheese, garlic powder, paprika, salt, and pepper. Mix well.

      In another bowl, beat the eggs, and add the Dijon mustard, mixing until well combined.

        Take each pork chop and dip it first into the egg mixture, ensuring it's fully coated, then dredge it in the almond flour mixture, pressing gently to help the coating stick. Repeat for each chop.

          Heat the coconut oil in a large skillet over medium heat. Once hot, carefully add the breaded pork chops to the pan. Cook for about 3-4 minutes on each side or until golden brown and cooked through. Remove from the skillet and place on paper towels to drain excess oil.

            For the lemon butter sauce, melt the unsalted butter in the same skillet over medium-low heat, scraping the bits from the bottom of the pan. Stir in the fresh lemon juice and lemon zest, allowing the sauce to bubble gently for about 2 minutes.

              Serve the crispy pork schnitzels drizzled with the lemon butter sauce, and garnish with freshly chopped parsley for a burst of color and flavor.
