Ingredients

1 lb flank steak

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

8 small corn tortillas

1 cup fresh cilantro, chopped

1/2 red onion, thinly sliced

1 avocado, sliced

Lime wedges for serving

Instructions

Marinate the Steak: In a small bowl, whisk together olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Coat the flank steak with the marinade and let it sit for at least 30 minutes at room temperature (or up to 2 hours in the fridge for deeper flavor).

Cook the Steak: Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and cook for about 6-8 minutes on each side for medium-rare, or until your desired doneness is achieved. Use a meat thermometer for accuracy (130°F for medium-rare).

Rest the Meat: Once cooked, let the steak rest for 5 minutes on a cutting board. This allows the juices to redistribute within the meat.

Slice the Steak: Thinly slice the steak against the grain into bite-sized pieces, ensuring maximum tenderness.

Warm the Tortillas: While the steak is resting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, until pliable and slightly toasted.

Assemble the Tacos: Take each tortilla and fill it with a few slices of steak. Top with chopped cilantro, red onion slices, and avocado.

Serve: Serve immediately with lime wedges on the side for squeezing over the tacos.
