Ingredients

1 pound ground beef (or a mix of ground pork and beef)

1/3 cup breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 inch piece ginger, grated

1 tablespoon soy sauce

1 tablespoon gochujang (Korean chili paste)

1 tablespoon sesame oil

1 tablespoon brown sugar

1 egg

Salt and pepper to taste

1/4 cup mayonnaise

1 tablespoon sriracha (more for extra spice)

Sesame seeds for garnish

Additional green onions for garnish

Instructions

Prepare the Meatball Mixture: In a large bowl, combine the ground beef, breadcrumbs, chopped green onions, minced garlic, grated ginger, soy sauce, gochujang, sesame oil, brown sugar, egg, salt, and pepper. Mix until fully combined, but do not overwork the meat to keep the meatballs tender.

Form the Meatballs: Using your hands, shape the mixture into uniform meatballs, about 1 inch in diameter. You should get around 20 meatballs.

Cook the Meatballs: Preheat your oven to 400°F (200°C). Arrange the meatballs on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until cooked through and browned on the outside. You can also pan-fry them in a skillet over medium heat for about 8-10 minutes, turning until evenly browned.

Prepare the Spicy Mayo: While the meatballs are baking, in a small bowl, mix together the mayonnaise and sriracha until well combined. Adjust the amount of sriracha based on your spice preference.

Serve: Once the meatballs are cooked, remove them from the oven. Place them on a serving platter, drizzling the spicy mayo over the top. Sprinkle sesame seeds and additional green onions for garnish.

            - Presentation Tips: For a fun touch, serve the meatballs on individual skewers, with a small bowl of extra spicy mayo on the side for dipping. You can also add some pickled cucumbers or kimchi on the side for an authentic Korean flair.
