1 cup chocolate chips (milk or dark based on preference)

1/2 cup almond flour

1 teaspoon vanilla extract

1 egg (for egg wash)

1 tablespoon coarse sea salt (for topping)

Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, chilled butter, sugar, and salt. Use a pastry cutter or your fingertips to blend until the mixture resembles coarse crumbs.

    Add Water: Gradually add cold water, mixing until the dough just comes together. Do not overmix. Gather the dough into a ball, flatten it into a disk, cover with plastic wrap, and refrigerate for 30 minutes.

      Roll and Fold: On a lightly floured surface, roll the dough into a rectangle about 1/4 inch thick. Fold it into thirds like a letter. Turn 90 degrees, and roll again into a rectangle. Repeat the folding process two more times to create layers in the dough.

        Incorporate Flavors: After the final folding, roll out the dough one last time and sprinkle the almond flour over the surface. Fold the dough over the almond flour and roll again to incorporate it evenly.

          Cut and Fill: Cut the dough into triangles (similar to how you would for croissants). Place a few chocolate chips at the base of each triangle and roll them up tightly.

            Chill Again: Arrange the rolled crookies on a lined baking sheet, cover them with a kitchen towel, and let them rest in the refrigerator for another 20 minutes.

              Preheat Oven: While the dough is chilling, preheat your oven to 375°F (190°C).
