1 cup all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

½ cup granulated sugar

1 tablespoon lemon zest

1 large egg

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup powdered sugar (for topping)

1 teaspoon additional lemon zest (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

    In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

      In a large mixing bowl, use an electric mixer to cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

        Add the lemon zest, egg, lemon juice, and vanilla extract to the butter mixture. Mix until fully combined.

          Gradually incorporate the dry ingredients into the wet mixture, mixing just until combined. Be careful not to overmix.

            Spread the cookie dough evenly in the prepared baking pan, smoothing the top with a spatula.

              Bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.

                Allow the cookies to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Transfer to a wire rack to cool completely.

                  Once cooled, dust the top generously with powdered sugar. For an extra touch, sprinkle the additional lemon zest on top for a pop of color and brightness.
