1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup cream cheese, softened

1/4 cup unsalted butter, softened

1 large egg

1/2 cup lemon juice (freshly squeezed)

Zest of 1 lemon

1 teaspoon vanilla extract

1/4 cup powdered sugar (for glaze)

1 tablespoon lemon juice (for glaze)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with cooking spray.

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.

      In another bowl, beat together the cream cheese and unsalted butter until creamy and smooth.

        Add the egg, lemon juice, lemon zest, and vanilla extract to the cream cheese mixture. Beat until fully incorporated.

          Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix.

            Divide the batter evenly among the muffin cups, filling each about 2/3 full.

              Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                While the muffins are cooling, prepare the glaze by mixing the powdered sugar and lemon juice until smooth.

                  Drizzle the glaze over the cooled muffins before serving.
