2 cans (5 oz each) of tuna in water, drained

1 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup mayonnaise

1 large egg

2 tablespoons fresh lemon juice

2 teaspoons lemon zest

3 cloves garlic, minced

1/4 cup green onions, finely chopped

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

Olive oil for frying

In a large mixing bowl, combine the drained tuna, breadcrumbs, mayonnaise, egg, lemon juice, lemon zest, minced garlic, chopped green onions, Dijon mustard, salt, black pepper, and cayenne pepper (if using).

    Use a fork to gently mix everything together until well combined but avoid overworking the tuna to keep a nice texture in the cakes.

      Shape the mixture into patties, approximately 2-3 inches wide and about 1/2 inch thick. You should be able to make about 6-8 patties depending on their size.

        Heat olive oil in a large skillet over medium heat. You want enough oil to lightly coat the bottom of the pan.

          Once the oil is hot, add the tuna cakes, being careful not to overcrowd the pan. Cook in batches if necessary.

            Fry the cakes for 3-4 minutes on each side or until they are golden brown and crispy.

              Once cooked, remove the cakes from the skillet and place them on a plate lined with paper towels to absorb any excess oil.

                Serve warm with a drizzle of extra lemon juice on top and a side of tangy dipping sauce (like tzatziki or a garlic aioli).
