Ingredients

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

Zest and juice of 2 lemons

3 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh cilantro, chopped

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Lemon wedges for garnish

Instructions

In a medium bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, chopped cilantro, dried oregano, red pepper flakes, salt, and pepper. Whisk until well blended.

Add the shrimp to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for 30 minutes to 1 hour. This will enhance the flavors.

Preheat your grill to medium-high heat. If you are using wooden skewers, soak them in water for about 30 minutes to prevent burning.

Thread the marinated shrimp onto skewers (about 4-5 shrimp per skewer), discarding any leftover marinade.

Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Avoid overcooking to keep them tender and juicy.

Remove the skewers from the grill and let them rest for a minute. Serve with lemon wedges for a fresh burst of citrus.
