1 cup cooked jasmine rice

6 cups vegetable broth

1 medium onion, finely chopped

2 cloves garlic, minced

2 large lemon zest (from about 2 lemons)

1/2 cup fresh lemon juice (about 3 lemons)

1 cup baby spinach, chopped

1 carrot, diced

1 celery stalk, diced

1 tablespoon olive oil

1 teaspoon dried thyme

1/2 teaspoon turmeric powder

Salt and pepper to taste

Fresh parsley or cilantro for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery; sauté for about 5-7 minutes until softened and the onion is translucent.

    Stir in the minced garlic and continue to sauté for another minute until fragrant.

      Add the vegetable broth to the pot, followed by the cooked rice, lemon zest, dried thyme, and turmeric powder. Bring the mixture to a gentle boil.

        Lower the heat and let it simmer for about 10 minutes to let the flavors meld.

          Stir in the fresh lemon juice and chopped spinach. Cook for another 2-3 minutes until the spinach is wilted.

            Season the soup with salt and pepper to taste.

              Serve hot in bowls, garnished with fresh parsley or cilantro for an added burst of flavor.
