2 cans (15 oz each) white beans (cannellini or great northern), rinsed and drained

4 cups vegetable broth

1 medium onion, diced

3 cloves garlic, minced

2 large carrots, diced

2 celery stalks, diced

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)

1 lemon, zested and juiced

2 tablespoons olive oil

Salt and black pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables begin to soften.

    Stir in the minced garlic and fresh rosemary, cooking for an additional 1-2 minutes until fragrant.

      Add the drained white beans and vegetable broth to the pot. Bring the mixture to a gentle boil, then reduce to a simmer.

        Let the soup simmer for 15-20 minutes to blend the flavors. Stir occasionally and adjust the heat as needed to keep it at a gentle simmer.

          Using an immersion blender, partially blend the soup to create a creamy texture while still leaving some whole beans for added texture. (If you don’t have an immersion blender, carefully transfer half of the soup to a regular blender, blend, and return it to the pot.)

            Stir in the lemon zest and lemon juice. Season with salt and black pepper to taste, adjusting the flavors as desired.

              Remove from heat and let it sit for a few minutes to enhance the flavors.
