8 oz whole wheat spaghetti

4 cups fresh spinach, washed and roughly chopped

2 tablespoons olive oil

3 cloves garlic, minced

1 lemon (zest and juice)

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese (or a vegan alternative)

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

In a large pot, bring salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and reserve 1/2 cup of the pasta water.

    While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it brown.

      Add the chopped spinach to the skillet and cook until wilted (about 2-3 minutes).

        Stir in the cherry tomatoes, red pepper flakes (if using), lemon zest, and lemon juice. Cook for an additional 2 minutes until the tomatoes are softened.

          Combine the drained pasta into the skillet, tossing well to coat with the lemon and spinach mixture. If the pasta seems dry, gradually add a splash of the reserved pasta water to reach your desired consistency.

            Remove from heat, season with salt and pepper to taste, and stir in the grated Parmesan cheese until melted and creamy.

              Serve immediately, garnished with fresh basil leaves and extra cheese if desired.
