Ingredients
  

1 cup quinoa, rinsed

2 cups vegetable broth or water

1/2 cup cherry tomatoes, halved

1 cucumber, diced

1 avocado, diced

1/4 cup red bell pepper, diced

1/4 red onion, finely chopped

Zest and juice of 1 lime

2 tablespoons olive oil

1/4 cup fresh cilantro, chopped

1/4 cup fresh mint, chopped

Salt and pepper to taste

Instructions
 

In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for 15-20 minutes until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool.

    While the quinoa is cooling, prepare the vegetables. In a large mixing bowl, combine the cherry tomatoes, cucumber, avocado, red bell pepper, and red onion.

      In a separate small bowl, whisk together the lime zest, lime juice, olive oil, chopped cilantro, and mint. Season with salt and pepper to taste.

        Once the quinoa has cooled, fluff it with a fork and add it to the bowl of vegetables.

          Pour the dressing over the quinoa and vegetables, and gently toss to combine all the ingredients together until evenly coated.

            Taste and adjust the seasoning with additional salt and pepper if needed. Chill in the fridge for 15-30 minutes to let the flavors meld.
