1 cup plain Greek yogurt

3 large eggs, separated

1 cup granulated sugar

1/4 cup vegetable oil

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon lemon zest (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.

    In a large bowl, whisk together the Greek yogurt, egg yolks, vegetable oil, and vanilla extract until smooth.

      In another bowl, combine the all-purpose flour, baking powder, salt, and lemon zest (if using). Gradually add the dry ingredients to the wet mixture, stirring until just combined.

        In a separate bowl, beat the egg whites with an electric mixer on high speed until soft peaks form. Gradually add the granulated sugar, continuing to beat until the egg whites are glossy and stiff peaks form.

          Gently fold the egg whites into the yogurt batter in three additions, being careful not to deflate the mixture.

            Pour the batter into the prepared cake pan and smooth the top with a spatula.

              Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

                  Dust with powdered sugar before serving, if desired.
