4 large russet potatoes

1 pound sirloin steak, cut into bite-sized pieces

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

½ cup sour cream

¼ cup chopped green onions

¼ cup crispy bacon bits (optional)

Fresh parsley for garnish

Preheat your oven to 425°F (220°C). Wash the russet potatoes thoroughly and pat them dry. Poke several holes in each potato with a fork to allow steam to escape during baking.

    Rub the potatoes with olive oil and sprinkle generously with salt. Place them directly on the oven rack or on a baking sheet. Bake for 45 to 60 minutes, until the skins are crispy and a fork easily pierces the flesh.

      While the potatoes bake, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the steak bites to the skillet. Season with garlic powder, smoked paprika, salt, and pepper.

        Sear the steak bites for 3-4 minutes, cooking until browned and cooked to your desired level of doneness. Remove from heat and set aside.

          Once the potatoes are done, carefully remove them from the oven and let them cool for a few minutes. Cut a slit down the center of each potato and gently squeeze the ends to open it up.

            Fluff the insides of the potatoes with a fork. Sprinkle shredded cheddar cheese generously over the inside of each potato while they are hot, allowing the cheese to melt.
