Ingredients

4 medium-sized russet potatoes

1 cup shredded cheddar cheese

1/2 cup crispy bacon bits (or cooked and crumbled tempeh for a vegetarian option)

1/4 cup sour cream (or Greek yogurt for a healthier alternative)

1/4 cup chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Slice the Potatoes: Wash and dry the russet potatoes. Slice them into 1/4-inch thick rounds. Leave the skin on for extra texture and flavor.

Season the Potatoes: Place the potato slices in a large mixing bowl. Drizzle with olive oil, then sprinkle with garlic powder, onion powder, salt, and pepper. Toss to ensure every slice is well-coated.

Roast the Slices: Line a baking sheet with parchment paper and arrange the potato slices in a single layer. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden brown and crispy.

Add the Toppings: Remove the potato slices from the oven. Immediately sprinkle a generous amount of shredded cheddar cheese on top of each slice, followed by the crispy bacon bits.

Return to the Oven: Put the loaded potatoes back in the oven for an additional 5-7 minutes, or until the cheese is fully melted and bubbly.

Garnish & Serve: Remove from the oven and let cool for a minute. Drizzle with sour cream, sprinkle with chopped green onions, and garnish with fresh parsley if desired. Serve warm.
