black beans, drained and rinsed (15 oz)

pinto beans, drained and rinsed (15 oz)

corn, drained (15 oz)

diced tomatoes with green chilies (14.5 oz)

taco seasoning (1 oz)

chopped (any color)

Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper and sauté until they are soft, about 5 minutes.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the ground turkey (or beef) to the pot, breaking it apart with a spoon. Cook until browned all over, about 6-8 minutes.
Once the meat is cooked, sprinkle in the taco seasoning, and stir until the meat is well coated.
Pour in the vegetable or chicken broth and bring the mixture to a gentle simmer.
Add the black beans, pinto beans, corn, and diced tomatoes. Stir to combine.
Let the soup simmer for 20-25 minutes to allow the flavors to meld together. Taste and season with salt and pepper as needed.
Serve hot, topped with your choice of shredded cheese, sour cream, diced avocado, crispy tortilla chips, and fresh cilantro.
