Ingredients

1 lb ground beef (or turkey for a lighter option)

1 cup breadcrumbs (or crushed crackers for extra flavor)

1/2 cup grated Parmesan cheese

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup finely chopped bell pepper (any color)

2 large eggs

1/4 cup milk

1/4 cup ketchup, plus extra for topping

2 tablespoons Worcestershire sauce (or soy sauce for a twist)

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper to taste

1/2 cup grated carrots (for moisture and sweetness)

1 tablespoon honey (for a slight sweetness)

Instructions

Preheat your oven to 350°F (175°C).

In a large mixing bowl, combine ground beef (or turkey), breadcrumbs, and grated Parmesan cheese.

Add the chopped onion, minced garlic, and bell pepper to the meat mixture.

In a separate bowl, whisk together the eggs, milk, ketchup, Worcestershire sauce, Italian herbs, salt, pepper, grated carrots, and honey until well combined.

Pour the wet ingredients into the meat mixture. Gently mix until all the ingredients are just combined—avoid over-mixing to keep the meatloaf tender.

Transfer the mixture into a loaf pan, shaping it into a loaf form. Spread a generous layer of ketchup on top for a flavorful glaze.

Bake in the preheated oven for about 1 hour or until the internal temperature reaches 160°F (70°C). Optional: for the last 10 minutes, you can broil the top to caramelize the ketchup for an added flavor punch.

Once done, remove from the oven and allow it to rest for about 10 minutes before slicing.

                  Prep Time: 15 minutes | Total Time: 1 hour 10 minutes | Servings: 6-8

                    - Presentation Tips: Serve slices of meatloaf on a plate, drizzled with additional ketchup, accompanied by a side of garlic mashed potatoes or a fresh garden salad. Garnish with chopped parsley for color. Enjoy your delightful Magic Meatloaf!
