4 white fish fillets (such as cod or halibut)

2 tablespoons olive oil

1 lemon, zested and juiced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and sliced

1/4 cup fresh parsley, chopped

Lemon slices, for garnish

Preheat the Oven: Preheat your oven to 400Β°F (200Β°C).

    Prepare a Baking Dish: Drizzle a tablespoon of olive oil in an oven-safe baking dish and spread it evenly.

      Season the Fish: Pat the fish fillets dry with a paper towel. In a small bowl, combine the lemon juice, garlic, oregano, thyme, and a pinch of salt and pepper. Brush this mixture generously over each fillet.

        Arrange the Vegetables: Place the halved cherry tomatoes and sliced olives around the fish in the baking dish. Drizzle the remaining olive oil over the vegetables and season with a little salt and pepper.

          Bake the Dish: Bake in the preheated oven for about 20-25 minutes, or until the fish flakes easily with a fork and the tomatoes are blistered.
