1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar (or lemon juice for a twist)

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the drained chickpeas, halved cherry tomatoes, chopped cucumber, and red onion.

    Add the sliced Kalamata olives, crumbled feta cheese, and chopped parsley to the bowl.

      In a small bowl, whisk together the olive oil, red wine vinegar (or lemon juice), dried oregano, salt, and pepper until well blended.

        Pour the dressing over the salad ingredients and gently toss to combine everything thoroughly.

          Taste and adjust seasoning, adding more salt and pepper if needed.

            Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld.

              Serve chilled or at room temperature.
