2 slices of sourdough bread

1 cup fresh spinach, washed and chopped

1/2 cup feta cheese, crumbled

1/4 cup sun-dried tomatoes, chopped

1/4 cup kalamata olives, pitted and sliced

1 teaspoon dried oregano

1 tablespoon olive oil

Salt and pepper to taste

1/2 cup mozzarella cheese, shredded

Optional: Balsamic glaze for drizzling

In a skillet over medium heat, add the olive oil and allow it to warm.

    Add the chopped spinach to the skillet and sauté for about 2-3 minutes until wilted.

      Stir in the crumbled feta cheese, sun-dried tomatoes, kalamata olives, dried oregano, salt, and pepper. Cook for another 2 minutes, allowing the flavors to meld together. Remove from heat.

        Heat another skillet or a Panini press over medium heat.

          Take one slice of sourdough bread and layer a generous portion of the spinach mixture on top.

            Sprinkle the shredded mozzarella cheese over the spinach mixture for extra creaminess.

              Top with the second slice of sourdough bread.

                Grill the sandwich in the skillet or Panini press for about 3-5 minutes on each side, or until the bread is golden brown and the cheese has melted.

                  Once done, remove the sandwich from the skillet and allow it to cool for a minute before slicing.
