Ingredients

1 lb ground chicken

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1/2 cup finely chopped onion

4 cloves garlic, minced

2 large eggs

1/4 cup fresh parsley, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/4 cup milk

1/4 cup ketchup (plus extra for topping)

Instructions

Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.

In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan, chopped onion, minced garlic, fine parsley, salt, pepper, dried Italian herbs, and milk.

Crack the eggs into the mixture and combine all the ingredients thoroughly until just mixed. Avoid overworking the meat to keep the meatloaf tender.

Transfer the mixture to the prepared loaf pan, shaping it evenly. Spread ketchup over the top to create a glaze.

Bake in the preheated oven for about 50-60 minutes, or until the internal temperature reaches 165°F (74°C).

Once cooked, let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute, keeping it moist.

Slice into thick pieces and serve warm, garnished with extra parsley if desired.

                Prep Time: 15 minutes | Total Time: 1 hour 10 minutes | Servings: 4-6

                  - Presentation Tips: Serve the meatloaf slices on a platter drizzled with additional ketchup or a homemade garlic herb sauce for extra flavor. Pair with roasted vegetables or a fresh salad to complete the meal.
