Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup diced tomatoes (fresh or canned)

1 cup corn (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 jalapeño pepper, finely chopped (optional)

1 cup shredded cheddar cheese

½ cup cream cheese

½ cup milk

1 tablespoon fresh cilantro, chopped (for garnish)

Instructions

Start by marinating the chicken breasts. In a small bowl, mix olive oil, cumin, paprika, garlic powder, onion powder, salt, and pepper. Rub this mixture onto the chicken breasts and let it sit for at least 15 minutes.

In a large skillet, heat a splash more olive oil over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes on each side or until cooked through and golden brown. Remove and set aside.

In the same skillet, add diced tomatoes, corn, black beans, and chopped jalapeño pepper. Sauté for 5-7 minutes, allowing the flavors to meld and the mixture to heat through.

In a separate saucepan, combine the cheddar cheese, cream cheese, and milk over low heat. Stir continuously until the cheese is melted and smooth, creating a delicious cheese sauce.

Slice the cooked chicken and place it back into the skillet with the tomato and bean mixture, ensuring the chicken is coated in the flavors.

Pour the warm cheese sauce over the chicken and vegetables, making sure everything is evenly covered. Let it simmer for another 2-3 minutes.

Remove from heat, garnish with fresh cilantro, and serve hot.
