Mexican Street Corn White Chicken Chili

2 cups cooked, shredded chicken

2 cups corn kernels (can be fresh, frozen, or canned)

1 onion, diced

3 cloves garlic, minced

2 medium potatoes, diced

4 cups chicken broth

1 can (15 oz) white beans, drained and rinsed

1 can (4 oz) diced green chilies

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper to taste

½ cup sour cream

¼ cup fresh cilantro, chopped

Juice of 1 lime

1 cup crumbled cotija cheese (for garnish)

Instructions
 

In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and sauté for an additional minute until fragrant.

      Add the diced potatoes to the pot and cook for 5 minutes, stirring occasionally.

        Pour in the chicken broth, followed by the shredded chicken, corn kernels, white beans, and diced green chilies. Stir to combine.

          Season the chili with cumin, smoked paprika, chili powder, and salt and pepper to taste. Bring the mixture to a simmer over medium-high heat.

            Once simmering, reduce the heat to low, cover the pot, and let it cook for 20-25 minutes, or until the potatoes are tender.

              Stir in the sour cream, lime juice, and chopped cilantro until well blended and creamy. Adjust seasoning again if needed.

                Serve hot, garnished with crumbled cotija cheese and additional cilantro if desired.
