3 ripe bananas, mashed

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/3 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 1/2 cups all-purpose flour

1/2 teaspoon cinnamon (optional)

1/2 cup chopped walnuts or chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, and melted butter. Mix well until everything is incorporated.

      Beat in the egg and vanilla extract until the mixture is smooth and creamy.

        In a separate bowl, whisk together the baking soda, baking powder, salt, and flour (and cinnamon, if using).

          Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay.

            If desired, fold in the chopped walnuts or chocolate chips for added texture and flavor.

              Spoon the batter into the prepared mini muffin tins, filling each cup about 2/3 full.
