Ingredients
  

1 cup cooked chicken, shredded

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup bell peppers, diced (any color)

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

6 small flour tortillas

2 tablespoons olive oil

Sour cream and salsa, for serving

Instructions
 

In a mixing bowl, combine the shredded chicken, cheese, bell peppers, red onion, cilantro, cumin, garlic powder, paprika, salt, and pepper. Mix well until everything is evenly coated.

    Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

      Place one tortilla in the skillet and add about 2-3 tablespoons of the chicken mixture on half of the tortilla, folding the other half over to form a half-moon shape.

        Cook for about 3-4 minutes on each side or until the tortilla is golden brown and crispy and the cheese is melted.

          Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and filling mixture. Add more oil to the skillet as needed.

            Once all quesadillas are cooked, let them cool for a minute, then cut each into wedges.

              Serve warm with sour cream and salsa on the side for dipping.
